Green Thai Curry Paste
INGREDIENTS
10-15 green Thai chillies1 tablespoon coriander seeds1 tablespoon cumin1 tablespoon white pepper corns2 tablespoon crustacean paste (from lobster or shrimps)1 teaspoon salt2 stalks lemongrass, lower thirds4 shallots4 garlic cloves4 cm galangal3 kaffir lime leaves1 Bio lime1 covenant coriander with roots
Green Thai Curry Paste
METHOD
1. Roast coriander, cumin and pepper without oil in a pan at low temperature to a goldenbrown color (swivel regularly). Put the spices aside and let it cool down.
2. Wash the coriander and drain it. Peel the shallots. Peel the garlic and press it through a garlic press. Wash the lemongrass and cut it to very small rings. Now clean the galangal well and cut into small pieces. Wash the lime under hot water, rasp a little of it’s peel. Cut the lime in 2 pieces and squeeze out the juice.
3. Crush the coriander seeds, cumin, pepper and salt finely in a mortar sufficiently large.
4. Chop chillies, shallots, coriander with roots, lime peel, galanga and the kaffir lime leaves finely.
5. Now put all ingredients into the mortar, mix them well and crush it until you will have a fine green curry paste.
6. Try the taste and possibly for any more meals portion it and store it in a fridge or in the froster.
Useful knowledge: The Green Thai Curry Paste can be stored easily in the fridge for 1 week and in the froster for month. it is advisable to make portions before frosting.
If you prefer the Green Thai Curry Paste not so hot, you may remove the seeds of the green chillies before preparing the paste. If you get no mortar available, you may also use a strong mixer or a hand-held blender to prepare the Green Thai Curry Paste. Be careful with the chillies. It is the best to wear gloves, when you work with hot chillies. Take care of your eyes, when you are using a mixer or a hand-held blender preparing the paste.
