Yellow thai curry with turkey breast

INGREDIENTS

400 g of diced turkey breast3 tablespoons yellow curry paste500 ml coconut milk200 g diced potato1 onion2 tablespoons chopped fresh coriander2 teaspoons sugar1/4 teaspoon salt1 tablespoon soy sauce1 tablespoon fish sauce

Yellow thai curry with turkey breast

METHOD

1. Cut the turkey breast and potatoes into small cubes and wash well. Drain well and place aside separately.

2. Heat up 200 ml coconut milk over medium heat to a simmer.

3. Add the yellow curry and mix it well.

4. After 2 minutes pour in the diced turkey breast.

5. After another 3 minutes, pour in the rest of the coconut milk, stir it slowly and simmer for 3 minutes.

6. Add the salt, sugar, soy sauce and fish sauce gradually.

7. At last add potatoes and gently stir it and simmer for a few minutes until the sauce is thickened.

8. Check seasoning and consistency of the potatoes.

9. Just before serving, add the coriander.
